Food grade fumaric acid is a very stable non-toxic non-hygroscopic acid with a fruit-like taste. It’s used to add tartness to the flavor of food and drinks. It’s a suitable non-hygroscopic acid substitute for hygroscopic acids, giving a similar flavor profile without the water absorbing qualities of those acids. The salts and esters of fumaric acid are known as fumarates, and are typically non-hygroscopic. Fumaric acid is found in fumitory (Fumaria officinalis), bolete mushrooms (specifically Boletus fomentarius var. pseudo-igniarius), lichen, Iceland moss, and is naturally present in the human body. It's 1.5 times as sour as citric acid.
